FLAMBEYED PRAWNS

WHAT GOES IN

Tiger / Jumbo prawns (shelled and deveined) – 600 gms
Garlic crushed – 10 gms
White vinegar – 10 ml
Red chilly paste – 10 gms
Salt – 1 tspn
Peppercorns crushed – 1 tspn
Egg white – 1 no
Groundnut oil – 50 ml
Brandy – 1 oz
Sping onion leaves – 15 gms

HOW TO PREPARE

1. Cut prawns into 1 inch long cubes and marinate with garlic, vinegar and pepper corns.
2. Heat oil to smoking hot. Dip prawns in beaten egg white and stir in the hot oil for 15 seconds.
3. Heat the edge of pan along with prawns and pour the brandy in it.
4. As the brandy starts burning, toss the prawn and serve garnished with rings of onion leaves.

Accompaniment : Tomato sauce
