Fish Pappas

How to prepare:

In a wok or medium-size pan heat oil (item 1) and add items 2 to 5. Fry ingredients at high flame for one minute or until they start browning. Add items 6 to 9 and cook for approximately 8 minutes or until fish pieces are done. Stir in item 10 (see footnote) and cook for another minute before setting aside.

For tempering, or final seasoning, heat oil (item 11) in a small frying pan, toss in them 12 and when the mustard seeds start crackling, add items 13 and 14 and stir-fry for one minute before combining with the fish.

As optional garnish, boil items 15 to 18 in a small pan and drain when done. Saute potato slices in coconut oil (item 19) and place on top of fish pappas before serving.

Accompaniment: Rice dishes. Cooking time: 30 mts.

Using a mortar or electric grinder, pulverize 3 tablespoons cashew nuts, 2 tablespoons fresh coconut pieces, and 3 tablespoons water to a fine paste.
