MUSSEL CHOWDER

What goes in:

Mussel : 4 nos
White wine : 50 ml
Cloves – crushed : 4 nos
Onion – chopped : 250 gms
Garlic – chopped : 2 cloves
Garam masala :1/2 tspn
Butter : 60 gms
Flour : 30 gms
Milk : 300 ml
Spring onion leaves – chopped : 30 gms

How to prepare:

1. Blanch mussels in water with wine and cloves. Seperate meat and clean well.
2. Heat 40 gms of butter in pan and saute onion, garlic and flour.
3. When the flour becomes pale, add milk, salt, pepper powder, garam masala and whisk well.
4. When it starts simmering add 300 ml of wine water and blanched mussels.
5. Adjust the seasonings and present in soup plate garnished with a dash of butter and spring onion leaves.
